A rainy stormy day with not much food in the house and look what came about. Ice Cream Cone Cupcakes. You just use a packet cake mix, any flavour and mix it up how you usually do. When it comes time to spoon it into cupcake papers, use flat bottomed cones instead. Sadly I have to say that you use the microwave to cook them so they don't burn. ( Not my preferred way to cook cupcakes, but it works for this.) I put mine in the microwave and watched them the whole time. When the cake batter rose above the cone, I opened the door to test them (about 1 and a 1/2 minutes) and they were done - fastest cupcakes EVER. When they were cool, we iced them with the icing mix from the packet mix and put sprinkles on top. They brightened up our grey day.
